Chicken feet are a mainstay of many cuisines, but a lot of people still look at them nervously. Not chef Harold Villarosa. In the first episode of his new show, Dish It Out, Harold hits the streets of New York to learn all about chicken feet and their place in Filipino cooking. He then returns to the kitchen to transform them into a brand new dish: chicken feet risotto.

  • I have been weary about eating chicken feet, but after watching this, I will definitely give it a chance. Also, the message at the end is very important. Breaks my heart that hate is rampant towards the AAPI communities. Uncle Harold has a heart of gold, and I am glad he used his own platform to bring this issue in the forefront. The Italian, when it comes to food is strictly accurate. Its a culture and art. It's better you use Rice with chicken feet because All ingredients and procedure were wrong for being a RISOTTO.

  • Chicken feet is prevalent across different cuisines and cultures. It’s gelatinous and delicious braised in soy sauce. BA should def produce more videos like this, encouraging people to use all parts of the animal with zero waste!

  • Chicken feet make one of the most delicious chicken stocks you will ever eat. And because a long, slow simmer of the foot with the nails incorporates natural gelatin into the stock, you can chill it on a sheet, cut it into tiny cubes, and either use it as a melting dressing for a grilled salad or put it in a wonton wrapper with a filling to make soup dumplings. That's how they do it in old-school places in Taiwan.
