  • This is nothing like the traditional method of making carbonara. The eggs should have been added to a large bowl with the mushrooms, and the pasta and any necessary pasta water added to the bowl to finish cooking the eggs.

  • I will try this tomorrow but with bacon just because bacon is carbonara. Or maybe I serve the bacon on the side so that we can try it just like you made it, then decide with the bacon. But then the bacon flavor will not be incorporated. Hm. This dish + bacon, done.

  • Mushrooms vs Bacon. Hmm. Macaroni and Cheese with Mushrooms. Brilliant. And this is the only way I can imagine it would be done. This should be packaged and sold in the frozen food sections of grocery stores. Also, was going to say 'this is nothing to do with pasta carbonara,' but there's a lot of pepper in it. Never had orecchiette before. I will now. I'm sure this is good, but it's hard to believe it's as good as bacon. Still, mushrooms are awfully good.

  • Seasoning the mushrooms with a touch of tamari, powdered porcini, smoked paprika and smoked salt would really help bring in some more bacon like umami

  • cool that it's meatless but using parmesan means it's not vegetarian - parmesan cheese is never vegetarian because it uses animal rennet. but there are great hard cheeses that do the same job and don't use animal rennet!

  • I mean dont get me wrong its look like a really good dish. But dont call that carbonara!!! The only good ingredients you were the eggs. Parsley, onion,garlic parmesan non of them are used for carbonara. As i said it looks like a very beautiful dish but name it something else not carbonara!!!

  • For all the outraged Italians out there... It is true that classic Carbonara sauce does not have parsley or garlic in it. But I think in this case, you must add these for flavoring the mushrooms.

  • Call anything you want but not “carbonara”. Our Italian recipe is made with guanciale, eggs, parmiggiano, pecorino and pasta. No garlic, no mushrooms.

  • Okay first off putting cheese on your pasta is yummy lol. If you want it spicy add some red pepper or cayenne pepper. Then you can cook chicken on the side to top it which complements the dish but use chicken tenders since they are thin.
